This is a recipe that I've used for years and is a favorite in our house. At the New Orleans Jazz & Heritage Festival, this is one of the "must eat" dishes.
Creole Crawfish Monica
If you can't get crawfish in your area, I'm sure you could substitute shrimp. Also, I usually throw in some parmesan cheese to give it a little more "oomph".

If I could only erase time....
I've had this clock hanging on my kitchen wall for years. Honestly, I was never really gaga over it, but it has served it's purpose...constantly prodding me to put the morning newspaper down and get ready for work, or to get dinner on the table. Sometimes even reminding me that it's "5 o'clock somewhere".
I recently decided to give it a face lift...get it....clock...face...nevermind. I have discovered the joys of chalkboard paint!!! This project took all of 15 minutes. I just used a foam brush and applied two coats and waited for them to dry....tick, tock...
....and voila.....a clock that can take on any personality I choose. My mind is reeling with possibilities...seasons...holidays...fun quotes. In the meantime, I am looking for more things to use my chalkboard paint on....any inanimate object is a target. You think any entire house painted black is a bit much?????

Meatless Monday - Frittata
Some Mondays you just can't muster the energy to put a big meal together. I've been in that frame of mind now for a while. Come to think of it, I kind of feel the same on Tuesdays, Wednesdays...you get the picture.
The weather has been so nice that all I want to do when I get home from work is grab a big glass of iced tea and head outside to putter around the garden. Every man for himself as far as dinner is concerned.

Sadly, we can't live on PB&J sandwiches, so it's time to cook.
Today's Meatless Monday recipe is brought to you courtesy of Giada De Laurentis. Oftentimes I find her recipes a little too bland, but we really liked this one. It took maybe 30 minutes from start to finish....really simple.
Changes I made....cause you know I did:
1. I added a little cajun seasoning
2. I couldn't find Fontina cheese (I was only stopping at once grocery store, not going on a scavenger hunt) so I just used shredded Italian blend....worked out fine.

Whew.....Pomp and Circumstance...it's Graduation time!!
We have been running nonstop with lots of fun activitites....no time for blogging lately.
Two straight weekends of Jazz Fest ran into the fun of Law School Graduations... not to mention that pesky think called work...add those together and I have been MIA!!
Friday we drove to Jackson, MS to see our future son in law graduate cum laude from MS College School of Law. We had a wonderful time with the future in laws, plopped into bed after a wonderful dinner and a lot of laughs, and then got up early to drive back home.
Arrived with just enough time to shower and head out to see our eldest daughter graduate magna cum laude from Loyola Univ. School of Law. I told you it was a whirlwind weekend of graduations. The future in laws also drove in (we are doing our part to make the oil companies even richer) and we had another wonderful evening of drinks, dinner, more laughs and less sleep. Woke up bright and early Sunday morning to prepare a brunch to celebrate the graduates accomplishments with the grandparents, aunts, uncles, etc....more eating, laughing...you get the picture.
Another milestone in the books.
We couldn't be prouder of our two future lawyers.
